Céleste :

Very expressive and complex nose for this sparkling rosé wine. It is a low alcohol wine (between 7 and 8° of alcohol). This wine is bottled before the fermentation is complete. Fermentation is completed in the bottle. The resulting carbonic dioxide gas produces during the fermentation, produces bubbles. The sugar not fermented stay in bottle and gives this subtle sweetness.

 

Description : 

Grape variety :   100 % Gamay

Harvest and ageing : The grapes are hand-picked. The grapes are pressed whole. Pressing is very smoot thanks to pneumatic presses just after the harvest. The ageing of the wine is made in stainless steel vat, thermo regulated.

Wine’s temperature : between 8° and 10°C

Cellaring:  Up to 3 years.

Container : 75 cl
